Celery and Apple Soup

Ingredients for 6 servings:

  • 1 onion(s)
  • 4 apples
  • ¾ celeriac
  • 3 tbsp butter
  • 1 ½ liters vegetable broth
  • 1 tsp lime juice
  • Salt and pepper, white
  • 100 g cream

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

light starter

Peel the onion. Wash and core the apples. Peel and wash the celery. Dice the onion, apples, and celery. Sauté the vegetables and apples in hot butter. Add the broth and simmer for about 20 minutes. Then puree the soup. Add the cream and season with salt, pepper, and lime juice. I only used 3/4 of a celery root so it doesn’t overpower the flavor. You can increase the amount if you like. Garnish with melted bacon and/or 1 teaspoon of cream just before serving. Bread goes well with it. The soup can be prepared the day before.
