Potato salad with apples

Ingredients for 4 servings:

  • 500 g potatoes
  • 4 apples
  • 1 bunch of spring onions
  • 100 g Edam cheese, grated
  • 1 cup meat broth
  • 1 tbsp mustard
  • 1 tbsp marjoram
  • ½ tsp sugar
  • 3 tbsp white wine vinegar
  • salt and pepper
  • 8 tbsp oil
  • 1 garlic clove(s)
  • 3 tbsp sunflower seeds
  • ½ package of cress

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Boil and slice the potatoes, coarsely grate the apples or cut them into small pieces. Make a marinade with meat broth, mustard, sugar, white wine vinegar, oil, salt, and pepper. Dice the garlic and slice the spring onion. Place everything in a bowl and mix. Let it sit for at least an hour. Garnish with the cress. 500 kcal per serving.
