Estonian potato salad

Ingredients for 4 servings:

  • 300 g potatoes
  • 200 g carrot(s)
  • 200 g pickled cucumber(s)
  • 100 g onion(s)
  • 2 eggs, size M
  • 150 g sour cream
  • 150 g mayonnaise
  • 1 tsp mustard, medium hot
  • some salt
  • some sugar
  • some parsley, for sprinkling

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 3 hours 45 minutes

A must at any party in Estonia

Boil the potatoes in their jacket potatoes. Peel and boil the carrots. Let both cool. Dice the cucumber, onion, and eggs. Cut the cooled potatoes and carrots into larger cubes. Mix all the chopped ingredients together. Mix the sour cream with the mayonnaise and season with salt, sugar, and mustard. Stir into the salad and sprinkle with parsley. Let it marinate well.
