Roro's savory peach pancake – topped with cheese

Ingredients for 2 servings:

  • ½ can/n peach(s), half fruit
  • 1 bunch of spring onions
  • ½ tsp thyme, dried
  • 2 tbsp butter
  • some fat, for the molds
  • some pepper, freshly ground
  • 4 slices of Gouda cheese, young – approx. 100 g
  • 2 tsp cranberries, from the jar – alternatively blackcurrant jelly
  • some cayenne pepper, ground

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

ideal as a small snack…

Drain the peaches. Clean the spring onions, slice them into rings, and sauté them in hot fat for about 2-3 minutes. Quarter the peaches and place them with the sautéed onions in 2 greased ovenproof dishes. Sprinkle with thyme and pepper. Place the cheese slices on top. Bake in a preheated oven at 225°C for 10-15 minutes. Before serving, sprinkle with a little cayenne pepper and garnish each with 1 teaspoon of cranberries. Garnish with fresh thyme leaves, if desired. Serve with buttered toast. If you don’t have any smaller dishes, you can also prepare the dish in a larger dish.
