Handkäs' with music – fermented

Ingredients for 2 servings:

  • 250 g cheese (Hessian farmer’s hand cheese 4 pieces), pre-ripened
  • 2 tbsp oil (corn oil), tasteless
  • 2 tbsp juice (apple spritzer)
  • 4 tbsp vinegar (wine vinegar, red or white), mild
  • ½ large vegetable onion(s)
  • 2 slice(s) of brown bread (sourdough bread), fresh
  • 20 g butter sour cream butter

Instructions

Working time approx. 5 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 5 minutes

Place four mature hand cheeses side by side in a suitable bowl. Mix the oil, apple spritzer, and vinegar and pour over the cheese. Let it ferment in a moderately warm place for 1-2 hours. Arrange the cheese with the vinaigrette on two plates. Finely chop the onion and scatter it over the cheese. Serve with butter and bread. This goes best with a glass of Sauvignon Blanc!
