Ingredients for 1 servings:
- 200 g whole grain flour
- 100 g ground walnuts or other nuts
- 1 tsp, leveled salt
- 200 g margarine, vegan
- 3 tsp baking powder
- 200 g cane sugar (raw cane sugar)
- 300 ml banana(s), roughly mashed
- 1 pinch of vanilla
- Powdered sugar or chocolate coating for decoration
- e.g. chocolate (chocolate drops) or raisins or similar.
- Fat for the mold
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 30 minutes
as always without animal products
Whisk the margarine with sugar and salt until fluffy. Combine the nuts, flour, baking powder, and vanilla. Stir in the margarine and banana and pour into a greased loaf pan. Bake at 180°C for 80 minutes, covering with aluminum foil about halfway through the baking time to ensure the cake cooks but doesn’t overbrown. If you like, dust the cake with powdered sugar while it’s still warm or cover it with chocolate coating after it’s cooled. The cake is especially delicious if you mix chocolate chips into the batter and decorate the finished cake with chocolate coating and walnut halves.
