Curry – cucumbers

Ingredients for 12 servings:

  • 2 ½ kg cucumber(s)
  • 5 onions
  • 3 tbsp salt
  • 3 cup(s) vinegar (Sprite vinegar)
  • 3 cups sugar
  • 2 tbsp mustard seeds
  • 1 tsp ground pepper
  • 1 tsp sweet paprika powder
  • 2 tsp curry powder
  • 1 tsp chili powder
  • 1 tsp dill, chopped

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes

Ideal as a barbecue side dish, on sausage sandwiches or even on its own

Peel and slice the medium-sized cucumbers. Slice the onions as well. Add 3 tablespoons of salt. Let stand for 2 hours, then drain the liquid. Then add the remaining ingredients and enjoy. Tip: I’ve also mixed everything together (due to time constraints) and let it sit overnight. This will produce quite a bit of liquid, but it’s still quite substantial.
