Quick marinated zucchini

Ingredients for 6 servings:

  • 2 zucchinis
  • 100 ml oil
  • 4 tbsp vinegar
  • 3 cloves garlic
  • 2 tbsp honey
  • 2 tsp salt
  • ½ chili pepper(s)
  • Pepper, coarse
  • a few sprigs of dill
  • a few stalks of parsley

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours 30 minutes; Total time approx. 2 hours 40 minutes

Slice the zucchini lengthwise into thin slices, place in a bowl, season with salt, and let stand for about 10-15 minutes. Meanwhile, finely chop the herbs and chili pepper and add to the zucchini. Crush the garlic, add the vinegar and honey, season with pepper, and mix. Let stand for another 10-15 minutes, stirring occasionally. Add the oil, mix, and let stand in the refrigerator for about 2 hours. Arrange decoratively and serve. These marinated zucchini can be prepared the day before without stress; they taste even better that way. You can vary the amount of seasoning to your taste.
