Green pancakes

Ingredients for 2 servings:

  • 2 m.-sized eggs
  • 200 ml milk or oat drink
  • 60 ml mineral water
  • 200 g chickpea flour
  • 100 g fresh leaf spinach
  • n. B. Salt
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Blend eggs, milk, salt, spinach, and water in a blender until no spinach pieces remain. Then, using a hand mixer, stir in the flour. Fry the batter in batches in a pan with a little oil, as you would normally cook pancakes. My son (4) likes to eat his “green pancakes” with some cream cheese, Parmesan cheese, and tomatoes or ketchup.
