Basil Pancake

Ingredients for 1 servings:

  • 20 g basil leaves
  • 25 g peas, frozen
  • 2 eggs, size M
  • 1 pinch of salt
  • 2 pinches of baking powder
  • 55 g spelt flour
  • 50 ml carbonated mineral water
  • 1 tbsp virgin coconut oil for frying

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes

Wash the basil leaves. Let the frozen peas thaw briefly. Combine all ingredients in a tall bowl and blend until finely ground. Let the batter rest for 10 minutes. Heat coconut oil in a pan. Fry 6 small pancakes in it, cooking for about 3-4 minutes on each side over low heat. I served it with tomato salsa and herb sour cream garnished with some basil.
