Baked sage onions

Ingredients for 6 servings:

  • 1 kg onion(s), small, red or white
  • 3 chili peppers, dried
  • 15 sage leaves
  • 6 tbsp olive oil
  • 2 tbsp brown sugar
  • ½ port wine
  • 1 lemon(s), the juice
  • salt and pepper
  • 500 g sheep’s cheese, diced
  • white bread

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

as a small meal or side dish

Finely crush the chilies in a mortar and pestle, then finely slice the sage. Heat half the oil in a pan and fry the halved onions. Sprinkle with the sugar and let it caramelize. Add the chilies and sage and pour in the port wine. Season with lemon juice, salt, and pepper and simmer for 10-15 minutes (depending on the size of the onions). Preheat the grill. Now add the onions and their juices to a baking dish and sprinkle with the cheese. Brush the cheese with the remaining oil and bake until golden brown. Serve with white bread.
