Baked pumpkin with apple, thyme and soft cheese

Ingredients for 2 servings:

  • 450 g pumpkin(s) (e.g. Buttercup, Butternut, Futsu or Hokkaido if necessary)
  • 1 m.-sized apple, sour
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 4 sprigs of thyme, fresh
  • Sea salt
  • pepper
  • 100 g soft cheese, milder, e.g. Tomme, Brie etc.

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

mild, French-inspired pumpkin variant from my test kitchen

Preheat the oven to 180°C. Peel the pumpkin, depending on the variety, and slice it. Slice the apples as well. Make a marinade from honey, olive oil, thyme, lemon juice, salt, and pepper and drizzle it over the pumpkin and apple pieces. Place in the oven for 20 minutes. Cut the cheese into pieces, spread it on top, and return everything to the oven for another 10 minutes to melt the cheese. Sprinkle the dish with freshly ground pepper. Tastes delicious simply with baguette. Can be served as a starter or main course, and lamb’s lettuce goes well with it.
