Ingredients for 4 servings:

  • 250 g flour
  • 1 tsp salt
  • 250 g cream cheese (cottage cheese)
  • 250 g butter

Instructions

Sift the flour into a bowl. Add the salt, curd cheese, and butter. Knead the dough with a food processor or a blunt knife (not by hand) until it comes together and is smooth. Let it rest in the refrigerator for two hours. Roll out the dough. Cut out a 50×30 cm rectangle. Mark every 15 cm along the bottom edge. Make the first mark at the top edge after 7.5 cm, and the remaining marks every 15 cm. Using a pastry wheel and a ruler, cut out isosceles triangles from the bottom corner to the first mark at the top edge, and so on. Roll up the triangles from the wide side and shape them into rounds. Place the croissants on a greased baking sheet. Let rest for another 30 minutes under a cloth. Bake in an oven preheated to 200°C for about 20 minutes until golden brown. Tip: Fold the remaining dough together from the top and bottom to form a triangle, then roll it up. You can also fill the croissants with cheese, ham, or sausage. They also taste great with jam, fruit, or chocolate (Nutella).
