Ingredients for 1 servings:
- 250 g wheat flour, type 550
- 250 g rye flour, type 1150
- 30 g sesame seeds
- 20 g flaxseed
- 200 ml water, lukewarm
- 150 ml milk, lukewarm
- 1 packet of dry yeast
- 10 g salt
- 10 g sugar
- 35 g butter, soft
- 1 tbsp applesauce
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 45 minutes; Total time approx. 3 hours 5 minutes
Knead all ingredients, except the sesame seeds, together for about 10 minutes. If you want to use fresh yeast, dissolve it in the 200 ml water first and let it stand for about 10 minutes before mixing the ingredients together. Cover the dough with a damp cloth and let it rest for about 30 minutes. Then knead the dough again vigorously and place it in a loaf pan. Sprinkle with sesame seeds and then cover with a damp cloth and let it rise in a warm place for about 1 1/2 hours. Preheat the oven to 220 degrees (top/bottom heat). Then bake the toast with decreasing temperature. i.e. first for about 5 minutes at 220 degrees, then about 40 minutes at 180 degrees. It is best to let the bread cool for half a day before slicing. The fitness toast bread freezes well.
