Peaches wrapped in ham on arugula

Ingredients for 4 servings:

  • 2 peaches, pitted
  • 6 slices Parma ham or Serrano, halved crosswise
  • 100 g rocket, mixed salad or lettuce
  • 125 ml balsamic vinegar
  • 50 g brown sugar
  • Black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut each peach into 6 wedges and wrap them in the Parma ham. Arrange on plates with the arugula. Boil the balsamic vinegar and sugar in a non-stick pan over high heat until syrupy. Let cool slightly, then drizzle over the salad. Season with pepper.
