Ingredients for 4 servings:
- 2 peaches, pitted
- 6 slices Parma ham or Serrano, halved crosswise
- 100 g rocket, mixed salad or lettuce
- 125 ml balsamic vinegar
- 50 g brown sugar
- Black pepper, freshly ground
Instructions

Cut each peach into 6 wedges and wrap them in the Parma ham. Arrange on plates with the arugula. Boil the balsamic vinegar and sugar in a non-stick pan over high heat until syrupy. Let cool slightly, then drizzle over the salad. Season with pepper.
