Picking salad with warm feta cheese and sugar snap peas

Ingredients for 2 servings:

  • 100 g lettuce, washed and sorted lettuce
  • 75 g sheep’s cheese with herbs, without oil
  • 75 g sugar snap peas
  • 3 sprigs of parsley, flat, coarsely chopped
  • 1 onion(s), cut into half rings
  • butter
  • 4 tbsp olive oil
  • 3 tbsp Balsamic vinegar, white
  • 3 tbsp orange juice
  • 1 tsp mustard
  • 2 tsp honey
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

Spin the lettuce and arrange on plates. Drizzle with some dressing. Wash the snow peas, trim off the ends, and blanch in salted water for 5 minutes. Then rinse with cold water. Sauté the onion in a little butter, add the snow peas, feta cheese, and parsley, and sauté for about 3 minutes, until the feta cheese begins to melt. Season with salt and pepper and drizzle with some more dressing over the feta cheese and snow pea mixture. Serve with baguette.
