Mom's apple red cabbage

Ingredients for 12 servings:

  • 4 onions, in pieces
  • 2 tbsp goose fat
  • 1 large red cabbage, cut into strips
  • 125 ml red wine vinegar
  • 125 ml red wine
  • Salt
  • pepper
  • 3 apples, peeled, pitted and chopped
  • 2 bay leaves
  • 6 allspice, whole
  • 6 juniper berries
  • some sweetener

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Sauté the onions in the lard until translucent, then add the chopped red cabbage to the pot. Deglaze with red wine vinegar to preserve the color of the cabbage, stirring thoroughly. Pour in the red wine, season with salt and pepper. Mix in the apples and add the spices in a spice bag to the pot. Let everything simmer for about 45 minutes. When the red cabbage is soft enough—it should still have a bit of a bite—season again with salt and pepper and add the sweetener. I always reserve two servings for immediate consumption, then freeze the rest in two servings and thaw them as needed.
