Red mullet fillets on oven-baked tomatoes

Ingredients for 2 servings:

  • 8 fish fillets of red mullet
  • 5 tomatoes
  • 1 sprig(s) of thyme
  • 6 leaves basil, fresh
  • ½ lemon(s)
  • e.g. salt and pepper
  • e.g. olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Preheat the oven to 200°C (top/bottom heat). Slice the tomatoes. Finely chop the thyme and tear the basil. Place the tomatoes in the bottom of a baking dish. Season with salt and pepper, and sprinkle with thyme, then arrange the fish fillets skin-side up on top. Sprinkle with basil. Drizzle with the juice of half a lemon and a little oil. Bake in the oven for about 10-15 minutes.
