Breaded tripe

Ingredients for 2 servings:

  • 400 g tripe, pre-cooked, unleavened
  • 3 eggs, size M
  • 4 tbsp flour
  • 4 tbsp breadcrumbs
  • n. B. Clarified butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

It’s best to pre-order the tripe from your butcher. The tripe should be at least 5 x 10 cm in size. Crack the eggs. First coat the tripe in flour and press down firmly, then in egg, and finally in breadcrumbs. Deep-fry until golden brown.
