Colorful veggie couscous

Ingredients for 4 servings:

  • 375 g couscous
  • 450 ml boiling water
  • ¾ tsp salt
  • 75 g spring onions
  • 1 garlic clove(s)
  • 300 g zucchini
  • 250 g bell pepper(s), yellow
  • 250 g mushrooms
  • 300 g tomatoes
  • 4 tbsp margarine
  • pepper

Working time approx. 35 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

Place the couscous in a covered bowl, pour boiling water over it, season with salt, and let it stand, covered, for 5 minutes. Now slice the spring onions. Peel and chop the garlic. Clean and chop the zucchini, peppers, mushrooms, and tomatoes. Place everything in a pan with 2 tablespoons of melted margarine and sauté for 5-8 minutes. Season with pepper. Finally, mix the couscous with the remaining margarine, fold in the vegetable mix, season with salt again if desired, and serve.
