Fine vanilla yogurt apple pancakes à la Gaga

Ingredients for 1 servings:

  • 3 small apples
  • 3 m.-sized eggs
  • 1 packet of vanilla sugar
  • 150 g vanilla yogurt, 3.5% fat
  • 2 tsp vanilla pudding powder
  • 10 tbsp oat flakes
  • 3 tbsp flour
  • 1 pinch of salt
  • 8 tbsp milk
  • some fat for the pan

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Separate the eggs. Chill the egg whites. Whisk the egg yolks with the vanilla sugar, vanilla yogurt, pudding powder, oats, flour, salt, and milk. Let the batter rest for 30 minutes. Peel the apples, remove the cores, and cut the apple flesh into small wedges. Beat the egg whites until stiff peaks and fold in the beaten egg whites. Grease a frying pan with oil or margarine and add four equal heaps of batter to the pan. Cook the pancakes over medium heat until golden brown on both sides. The pancakes taste best straight from the oven. This quantity of ingredients makes about 14-16 pancakes. Serve with vanilla sauce, vanilla ice cream, apple compote, and cinnamon sugar. If you like your pancakes very sweet, add more sugar to the batter. The pancakes are also delicious with raisins.
