Banana-raisin pancakes

Ingredients for 3 servings:

  • 2 bananas, ripe
  • 1 cup of flour (type 405) – cup size 150 ml
  • 1 cup milk
  • 1 egg(s)
  • 1 tbsp sugar
  • e.g. raisins or sultanas
  • 2 pinch(s) cinnamon
  • 1 pinch of nutmeg
  • Fat

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mash the bananas with a fork. Mix all the batter ingredients, except the raisins, until smooth (a whisk will do, a mixer will also work; an immersion blender is not suitable). Finally, fold in the raisins. Fry small pancakes in a hot pan with a little fat until golden brown on both sides. Delicious with fruit salad, lemon yogurt or melon balls, honey yogurt (in summer), lukewarm fruit compote (in winter), or simply with cinnamon sugar, syrup, or hazelnut spread.
