Ingredients for 4 servings:
- 100 ml whipped cream
- 4 m.-sized eggs, separated
- 1 packet of vanilla sugar
- 1 lemon(s), untreated, grated peel
- 10 tbsp Amaretto
- 50 g flour
- 50 g sugar
- 20 g clarified butter
- 10 g butter, soft
- 20 g powdered sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Whisk the cream with the egg yolks, powdered sugar, vanilla sugar, lemon zest, Amaretto, and flour to form a smooth batter. Beat the egg whites with the sugar and a pinch of salt until stiff, then fold in. Melt the clarified butter in a large, non-stick pan, add the batter, and let it set for 3 minutes. Then bake in an oven preheated to 180°C on the second rack from the bottom until lightly golden brown. Remove the Schmarren, quarter it, turn it over, and scatter the butter in flakes on top. Return to the oven for another 10 minutes. Roughly tear the pieces into pieces with two forks, sprinkle with 10 grams of powdered sugar, and caramelize under the broiler for 3-4 minutes. Serve with apricot compote or on its own.
