Gourmet Banana Kaiserschmarrn

Ingredients for 2 servings:

  • 240 ml milk
  • 140 g flour
  • 30 g sugar
  • 2 eggs
  • 2 bananas
  • 1 tsp baking powder
  • 1 pinch of salt
  • butter
  • powdered sugar
  • e.g. raisins
  • e.g. apple compote or plum compote

Set the oven to 130°C fan/convection oven. Separate the eggs into yolks and egg whites and beat the egg whites with a mixer until stiff peaks form. Place the egg yolks, milk, flour, sugar, baking powder, salt, and the first banana in a bowl and mix until a smooth batter forms. Then, using a spoon, fold the egg whites into the batter. Set the oven to mark 8 out of 10 (or the equivalent) and let the butter foam in the pan. Pour the batter into the pan and swirl to spread evenly. Spread the sliced ​​raisins and the second banana evenly over the batter and press them in lightly with a spoon. Check when the batter is golden brown by gently lifting it, then turn it over. Use a spatula to break the batter into equal pieces, add a little more butter, and wait a few minutes until the pieces are golden brown again. Spread the golden brown pieces on a baking sheet and sprinkle with powdered sugar. After about 12 minutes, the powdered sugar will be caramelized and the inside of the Kaiserschmarrn will be light and airy. Serve the Kaiserschmarrn with apple or plum compote, if desired! Kaiserschmarrn can be served as a main course or, alternatively, with half the ingredients, as a dessert.
