Green asparagus with strawberry and pomegranate salsa

Ingredients for 2 servings:

  • 500 g asparagus, green
  • 50 g strawberries
  • ¼ pomegranate, seeds
  • 2 tbsp Balsamic vinegar di Modena, dark
  • 1 tbsp germ oil (wheat germ oil) or olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Trim the bottom of the asparagus and peel some of the bottom if necessary. Then simmer in water for up to 15 minutes, depending on how firm you like it. Rinse and dice the strawberries, and toss with the pomegranate seeds, balsamic vinegar, oil, salt, and pepper. Season the salsa to taste and pour it over the drained asparagus spears.
