marinated zucchini mushrooms

Ingredients for 4 servings:

  • 250 g mushrooms, brown or white
  • 150 g zucchini
  • 4 cloves garlic
  • 1 chili pepper(s), red, hot or mild to taste
  • 7 stalks parsley, flat
  • 2 tbsp balsamic vinegar, fruity
  • 2 tbsp oil (lime oil)
  • Fleur de Sel (Flor de Sal) flavored with lime
  • Pepper from the mill

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Grilled side dish

Clean the mushrooms and blanch them briefly in boiling water, then thinly slice them. Do the same with the zucchini, leaving the latter raw. Place them in a bowl with a lid. Finely chop the garlic, parsley, and chili and add them to the mushrooms and zucchini. Mix the other ingredients together to make a dressing and add it to the bowl. Cover the bowl and let it marinate for at least 4 hours. Turn the bowl upside down occasionally. This makes a delicious barbecue side dish and also works well on a buffet.
