Lavender cookies according to a French recipe

Ingredients for 1 servings:

  • 90 g butter
  • 60 g sugar
  • 1 egg(s)
  • 130 g flour
  • some salt
  • 30 g ground almonds
  • 1 tbsp lavender flowers

Instructions

Working time approx. 15 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 12 minutes

Cream the butter and sugar until fluffy, add the egg, and continue stirring. Mix the flour with the salt, almonds, and lavender blossoms and add. Knead into a dough. If the dough is very sticky, add a little more flour. Form the dough into a log (the diameter depends on how big you want the cookies; they will increase by about two-thirds during baking). Wrap the log in foil and refrigerate for about 1 hour. Preheat the oven to 180 degrees Celsius (top/bottom heat). Cut the log into 0.5-1 cm thick slices and place them on a baking sheet lined with baking paper. Bake for about 12 minutes, then remove from the oven and let rest for about 5 minutes. If you like, you can use more blossoms, but I find the flavor is too intense, especially with fresh blossoms. These were always a popular gift, beautifully packaged.
