Arugula salad with egg and tuna

Ingredients for 2 servings:

  • 250 g arugula
  • 2 eggs
  • 100 g diced ham
  • 20 g Parmesan
  • 2 tsp mustard, medium hot
  • 1 tsp balsamic vinegar
  • 2 tsp honey
  • 50 ml olive oil
  • ½ can tuna

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

quick, easy and delicious

First, wash the arugula and drain well. Fry the ham cubes until crispy. Hard-boil the eggs, then dice them finely. Add both to the arugula and mix well. Then add the tuna. For the dressing, mix the olive oil, balsamic vinegar, honey, and mustard well. Just before serving, pour the dressing over the salad and mix well. Grate the Parmesan cheese over the salad and serve. Serve with baguette or bread.
