braised white cabbage with apples and onions
First, remove the outer leaves of the white cabbage and cut out the stalk. Shred the cabbage. Cut any overly long pieces into chunks. Place the shredded cabbage and 2 bay leaves in a pot with a little water. Peel, dice, and core the apples. Peel and slice the onions. Add the onions and apple pieces to the white cabbage along with the goose fat and simmer gently over low heat for about 1.5 hours, stirring occasionally. Season with salt and pepper. Delicious with roast goose. This vegetable is very easy to prepare and tastes even better reheated the next day.
