Westphalian white cabbage, grandma's style

Ingredients for 4 servings:

  • 1,000 g white cabbage, medium-finely sliced
  • 125 g apples, sour, cut into thin sticks
  • 2 tbsp lard
  • 2 onions, finely chopped
  • 2 tsp caraway seeds
  • 1 tbsp vinegar
  • 1 pinch(s) sugar
  • Salt and pepper, white from the mill
  • 1 potato(s)
  • 250 ml water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Heat the lard in a saucepan, sauté the onions until translucent, layer the cabbage and apple slices, and add the seasoning. Pour in 250 ml of water and bring to a boil. Cover the pan and simmer the cabbage for 30-40 minutes. Ten minutes before the cabbage is done, rub the peeled potato onto the cabbage and stir thoroughly. Season to taste. Serve with roast pork, meatballs, and boiled potatoes.
