Ingredients for 4 servings:
- 400 g flour
- 25 g yeast
- 160 ml milk, lukewarm
- 100 g butter
- 2 eggs
- 1 pinch of salt
- 150 g blackberries
- 2 tbsp jam (berry jam)
- a little butter for the mold
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Knead the flour, eggs, yeast, milk, half the butter, and a pinch of salt into a smooth, glossy dough. Cover and let rise in a warm place for about 30 minutes. Sort and wash the blackberries, and drain well. Then mix with the jam. Knead the dough again thoroughly with your hands on a floured surface and roll out evenly, not too thinly. Using a shot glass, cut out small circles. Place the circles close together in a buttered baking dish. Leave some space between the dough rings for the blackberry mixture. Then pour the blackberry mixture into the empty spaces and let everything rise for another 15 minutes. Melt the remaining butter and saturate the dough with it. Bake in a preheated oven at 180°C (160°C fan-assisted oven) on the second rack from the bottom for about 25 minutes. Serve with vanilla sauce.
