Red cabbage for the Christmas season

Ingredients for 10 servings:

  • 1 small head of red cabbage, cut into strips
  • 5 shallots, cut into strips
  • 3 apples, peeled
  • salt and pepper
  • Sugar
  • red wine
  • Apple cider vinegar
  • Cinnamon
  • bay leaves
  • orange peel
  • Juniper berry(s)
  • clove(s)
  • gravy
  • Gingerbread spice
  • applesauce
  • Star anise
  • goose fat
  • ½ bottle of apple juice
  • ¼ bottle of orange juice
  • 1 vanilla pod(s), scraped

Instructions

Working time approx. 2 hours; Total time approx. 2 hours

Sauté the onions in the goose fat and immediately caramelize with a little sugar. Quarter the peeled apples, remove the cores, and slice them. Add them to the onions and sauté briefly with the red cabbage. Deglaze with the red wine and vinegar, add half of the apple juice and orange juice, and a spice bag containing bay leaves, star anise, juniper berries, cloves, cinnamon sticks, orange zest, and vanilla pod. Simmer for about 1 1/2 hours. As the liquid evaporates, add more red wine, juice, and a little gravy every now and then until the red cabbage reaches the desired consistency. Finally, remove the spice bag, season to taste, and refine with a little applesauce.
