Lemony quark dumplings with pureed fruits

Ingredients for 4 servings:

  • 500 g quark (20% fat)
  • 200 ml whipped cream, whipped until stiff
  • 100 g powdered sugar
  • 5 sheets of gelatin
  • 2 lemon(s) (organic), zest and juice
  • 500 g strawberries or mango, watermelon, apple…
  • possibly sugar for the fruit

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

Prepare the gelatin according to the package instructions and allow to melt. Place the quark in a bowl, mix with the powdered sugar, the juice, and zest of 1 to 1 1/2 lemons. Add the liquid gelatin and mix well. Finally, carefully fold in the stiffly whipped cream. Refrigerate for 3-4 hours until the mixture has set. Hull and quarter the strawberries, toss them with a little sugar (if desired), and let them sit in the refrigerator until the juice has released. Puree the fruit and add a dash of lemon juice. Place some of the puree on a plate. Use a tablespoon to scoop out dumplings from the quark and place them on the fruit mixture. Sprinkle with a little zest (grated lemon peel) as a garnish. Too much sugar, too much lemon, or other fruit? You can vary the recipe as you wish.
