Strawberry buttermilk jelly

Ingredients for 4 servings:

  • 250 g strawberries, washed and pureed
  • 6 sheets of gelatin or 9 g gelatin powder
  • 500 ml buttermilk
  • 2 tbsp lemon juice
  • 1 lemon(s), grated zest (approx. 1/2 tsp) and juice
  • 3 tbsp sugar
  • 1 tsp oil

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

Soak the gelatin according to the package instructions. Combine the strawberry puree, buttermilk, sugar, lemon juice, and zest. Dissolve the gelatin in a hot water bath or in the microwave. Stir a quarter of the buttermilk mixture into the hot gelatin, then mix with the entire buttermilk mixture. Pour into serving bowls greased with a little oil and refrigerate. After turning out, garnish with fresh strawberries, if desired.
