Cherry waffles with ice cream

Ingredients for 4 servings:

  • 100 butter
  • 60 powdered sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 100 Flour
  • ½ tsp baking powder
  • 50 oat flakes, fine
  • 200 ml buttermilk
  • 350 sour cherries
  • 250 ml ice cream, stracciatella
  • powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cream the butter with 50g of powdered sugar and the vanilla sugar until creamy. Carefully beat the eggs into the foamy mixture. Mix the flour with the baking powder and oats and fold them in as well. Stir in enough buttermilk so that the batter falls off the spoon in a runny manner. Pit the cherries. Set aside 100g of good-quality cherries and fold the rest into the batter. Pour about 2 tbsp of batter into the waffle iron for each waffle and bake until golden brown. Allow to cool on a wire rack. Arrange the waffles on a plate with 2 mini scoops of ice cream and a few cherries and dust with powdered sugar. You can also substitute blueberries, blackberries, etc. This also works great with wholemeal spelt flour. In this case, use a little more buttermilk.
