Spicy-sweet onion jam from Indonesia

Ingredients for 5 servings:

  • 300 g yellow onion(s), finely diced
  • 2 tbsp sambal oelek
  • 1 tsp chili flakes or crushed red pepper
  • ¼ tsp ginger root, finely chopped
  • 1 tbsp palm sugar or brown sugar
  • 2 tbsp kebab manis
  • 1 tbsp soy sauce
  • ½ tsp fish sauce
  • n. B. water

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 30 minutes

goes wonderfully with grilled meat, bratwurst and especially with my Indonesian meatballs

Heat a little oil in a nonstick frying pan. Add the onions and simmer over medium heat for about 30 minutes, until the onions are reduced and caramelized. Stir frequently. Add the sambal oelek, chili flakes, sugar, and ginger, and bring to a boil for 2 minutes. Add the soy sauce, ketjap manis, and fish sauce, and stir vigorously. Add enough water to reach the desired consistency. This spicy-sweet onion jam should be quite thick. It has long been one of my favorite sauces and also tastes great with bratwurst or other meat dishes.
