Sweet and sour semolina porridge

Ingredients for 3 servings:

  • 500 ml milk
  • ½ handful of woodruff (woodruff leaves), wilted
  • 1 large lemon(s), zest and juice
  • 100 g soft wheat semolina
  • 60 g sugar, alternatively stevia powder 1:10
  • 1 pinch of salt
  • 1 apple
  • 3 tbsp cane sugar
  • 3 handfuls of blueberries

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 21 minutes; Total time approx. 36 minutes

Heat the milk in a saucepan, but do not allow it to boil, and add the woodruff leaves in a paper tea bag. Add the lemon zest to the milk. Simmer for about 20 minutes under high heat, but do not allow it to boil. Then remove the woodruff bag and bring the milk to a boil. Mix the semolina, caster sugar or stevia powder, and a pinch of salt and stir into the boiling milk. Cook for 1 minute while stirring, then remove from the heat and let stand or swell, covered, for 5 minutes. Cut the apple into small pieces and divide between bowls. Squeeze the lemon and generously drizzle the apples with the juice. Allow half of the apple pieces to float in the lemon juice. Sprinkle a level tablespoon of brown sugar over the apple pieces in each bowl. Place the bowls containing the apple mixture in the microwave for 1 minute at 600W. Sprinkle each apple portion with a handful of blueberries. To serve, scoop out three dumplings from the woodruff and lemon semolina and place them on top of the fruit. They taste best warm.
