Greek cherry soup

Ingredients for 4 servings:

  • 400 g cherry(s), fresh
  • 150 g sugar
  • ½ liter white wine
  • 1 lemon(s), untreated
  • 2 cl brandy (cherry brandy)
  • 150 ml cream
  • 150 g yogurt, Greek
  • some cinnamon powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Wash, drain, and pit the cherries. Combine the cherries and sugar in a soup pot. Pour in the white wine. Bring the cherries to a boil. Simmer over medium heat for about 7 minutes and let cool thoroughly. Finely puree the cherries. Grate the lemon zest and squeeze the juice. Stir in both ingredients along with the cherry brandy. Stir in the cream and yogurt. Chill the soup until ready to serve, ladle into dessert bowls, and sprinkle with cinnamon.
