Blueberry soup

Ingredients for 3 servings:

  • 300 g blueberries, fresh or frozen
  • 4 tbsp sugar
  • 750 ml water
  • ½ tbsp cornstarch

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

Combine the blueberries and sugar in a saucepan, add water, and heat. Meanwhile, mix the cornstarch with cold water. Just before the berries are boiling in the pan, stir in the cornstarch mixture. Cook for one minute while stirring, then turn off the heat and continue stirring for another three minutes. Let the blueberry soup cool, pour into a jug or clay bowl, and refrigerate to chill. It also tastes great as an addition to muesli.
