Ingredients for 2 servings:

  • 130 g couscous
  • 250 g leaf spinach (frozen)
  • 30 g butter
  • 1 small onion(s)
  • 70 ml cream
  • 25 g raisins
  • ¾ tsp cumin
  • 12 coriander seeds
  • 25 g pine nuts
  • a little lemon juice
  • some nutmeg

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Simple and vegetarian

Cook the couscous according to the package instructions, depending on whether you’re using instant or regular couscous. Soak the raisins in water and roast the pine nuts without fat. Squeeze out the thawed spinach and chop finely. Finely grind the coriander and cumin in a mortar. Briefly toss the diced onion in the butter in a large pan, add the spinach, and sauté for about 5 minutes. Add the squeezed raisins, coriander, cumin, and cream. Add the couscous and mix everything well in the pan. Season to taste with salt, nutmeg, and lemon juice. Serve on plates and sprinkle with the pine nuts.
