Serbian fried rice

Ingredients for 4 servings:

  • 300 g vegetables (Balkan or farmer vegetables), frozen
  • 200 g long grain rice
  • 400 ml salt water
  • 2 tbsp clarified butter
  • 250 g minced meat, mixed
  • 3 tbsp ajvar
  • 8 tbsp vegetable broth
  • 1 tbsp parsley, chopped
  • e.g. sour cream
  • salt and pepper
  • Paprika powder, sweet

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 40 minutes

Thaw the vegetables in a sieve. Bring the rice and water to a boil, cover, and let it swell over low heat for 20 minutes, then drain and let cool. Heat 1 tablespoon of clarified butter in a non-stick pan. Brown the minced meat for 5-8 minutes and season with salt, pepper, and paprika. Remove the minced meat from the pan. Heat 1 tablespoon of clarified butter in the pan and brown the rice for 5-7 minutes. Add the vegetables and meat and fry for 3 minutes. Add the ajvar and vegetable stock, bring to a boil briefly, and season with salt and pepper. Finally, sprinkle with parsley. Season the sour cream with paprika and serve with the side dish.
