Bacon and Cheese Muffins

Ingredients for 1 servings:

  • 450 g flour, sifted
  • 1 cube of yeast
  • 1 tsp, levelled sugar
  • 175 ml milk, lukewarm
  • 100 g lean bacon
  • 1 egg(s)
  • 1 tsp salt
  • 100 g butter or margarine
  • 100 g cheese, finely grated, e.g. Emmental

Instructions

Working time approx. 15 minutes; Rest time approx. 55 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 40 minutes

Put the flour in a bowl and make a well in the center. Combine the sugar, yeast, and a little of the lukewarm milk, then pour into the well. Mix with a little flour, cover, and let rise for 15 minutes. Add the remaining milk, salt, egg, and butter, and knead well. Let rise for another 40 minutes. Dice the bacon and fry briefly. Stir the cheese and bacon into the risen batter, divide evenly among 12 muffin cups, and bake on the middle rack at 160°C (fan oven) for about 30 minutes.
