Ingredients for 2 servings:

  • 50 g sugar
  • 150 ml water
  • 2 bulb(s)
  • some white wine
  • lemon juice
  • possibly mint

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Dissolve the sugar in the water. Chop 2 pears, process in a food processor with a little lemon juice and a good splash of white wine until creamy. Then add the cooled water-sugar solution and mix thoroughly again (maybe not all of it; you don’t want it to become too runny). Pour everything into a metal bowl and place it in the freezer for about 2 hours. Place it back in the food processor and mix thoroughly. It now has a really nice, creamy consistency. Return it to the freezer and, just before serving, mix thoroughly again to prevent it from becoming too thick. If desired, add some chopped mint.
