Zucchini, baked, with cream cheese filling

Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 1 cup cream cheese with herbs
  • 1 slice(s) ham (cooked ham), approx. 1 cm thick
  • 1 tomato(s)
  • 1 onion(s)
  • Milk
  • salt and pepper
  • Cheese

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve the zucchini, scoop out the flesh, and briefly blanch in lightly salted water. Finely dice the tomatoes, onions, and cooked ham, add them to the cream cheese, and mix with milk until smooth. Season with salt and pepper. Place the zucchini halves in a baking dish, fill with the cream cheese mixture, and sprinkle with cheese. Bake at 180-200°C (350-400°F) until the cheese is golden brown. Serve with herb baguette, if desired.
