Chicken breast with walnuts, orange and celery

Ingredients for 4 servings:

  • 200 g wild rice mix
  • some salt
  • 500 g chicken breast
  • 200 g celery
  • 200 g spring onions
  • 1 tbsp oil
  • 2 tbsp butter
  • 1 garlic clove(s)
  • 150 ml orange juice
  • 50 g walnut kernels, quartered
  • 1 orange(s)
  • some chives, if desired
  • some lemon balm, maybe

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cook the rice in salted water according to the package instructions. Meanwhile, cut the chicken breast into strips. Clean and chop the vegetables. Fillet the orange. Peel and press the garlic. Quarter the walnuts. Heat the butter and oil in a large pan. First, sauté the vegetables and add the garlic. Now add the chicken and cook for about 4 minutes. Top up with the orange juice, add the orange segments and nuts, and heat briefly. Drain the rice and serve everything together. If desired, finely chop the herbs and scatter them on the plates.
