Braised cucumbers with cashew sauce

Ingredients for 2 servings:

  • 1 medium-sized onion(s), chopped
  • 1 tbsp coconut oil
  • 1 cucumber(s)
  • n. B. Salt
  • e.g. lemon pepper or white pepper
  • 2 handfuls of cashew nuts or ready-made cashew butter
  • 1 cup of filtered water (approx. 200 – 250 ml content)
  • n. e.g. herbs, e.g. B. Dill, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Sauté the chopped onion in hot coconut oil. Peel the cucumber, halve it, and scrape out the seeds with a teaspoon, then cut the cucumber into pieces. Once the onions are slightly tender, add the cucumber pieces and simmer. Season with salt and lemon pepper. Place the cashews in a blender, add a little water, and blend until smooth. Pour the cashew mixture over the sautéed cucumbers, mix well, and season to taste. Garnish with chopped herbs, preferably dill. Boiled potatoes are a good side dish.
