Fried penne with snow peas

Ingredients for 4 servings:

  • 400 g pork fillet(s)
  • 400g penne
  • 200 g sugar snap peas
  • 300 g mushrooms
  • 1 can sweetcorn kernels, drained
  • 5 spring onions
  • 8 soft tomatoes with sea salt or herbs
  • 5 eggs
  • Oil for frying
  • salt and pepper
  • possibly chili
  • possibly garlic

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Slice the pork fillet and fry thoroughly in a pan with oil. Then set aside. Cook the pasta according to the package instructions. Sauté the mushrooms and snow peas in the oil from the meat. Slice the spring onions and add them. Just before the vegetables are the desired degree of browning, add the corn and tomatoes and fry briefly. Season the vegetables with the desired seasoning. Remove the pan from the heat. Lightly fry the pasta in a pan. Mix the eggs together and season. Pour the mixture over the pasta and fry until browned to the desired degree. Mix the meat and vegetables. Pour the vegetable and meat mixture over the pasta and serve hot.
