Pasta in creamy spinach and cheese sauce

Ingredients for 2 servings:

  • 250 g pasta, e.g. penne or fusilli
  • 2 cloves garlic
  • 250 ml milk
  • 250 ml vegetable broth or chicken broth
  • 50 g cream cheese
  • 200 g cocktail tomatoes
  • 250 g fresh leaf spinach
  • 2 tsp olive oil
  • 2 tsp butter
  • e.g. Parmesan
  • salt and pepper
  • Paprika powder, sweet
  • nutmeg
  • fresh basil, if desired, for garnishing

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

One-Pot Pasta

Finely chop the garlic cloves or press them through a garlic press, and halve the cherry tomatoes. Heat the olive oil in a saucepan or deep frying pan, add the garlic, and sauté for about 1 minute. Then add the vegetable stock, milk, and pasta to the pan along with the garlic, cover, and simmer on low heat for about 12-15 minutes. Stir occasionally. Remove the lid and stir in the butter and cream cheese until completely dissolved. Finally, add the spinach and tomatoes and simmer briefly. If you like, stir in a little more Parmesan cheese and season to taste.
