Ingredients for 1 servings:

  • 200 g butter
  • 90 g sugar
  • 1 pinch of salt
  • 4 egg yolks
  • 1 large egg(s)
  • 1 kg flour
  • 0.38 liters of milk
  • 1 pack of yeast
  • 1 egg white for brushing
  • Cake icing or fondant

First, crumble the fresh yeast and sprinkle over the sugar and salt. Wait until it becomes liquid (you may need to stir it a bit). Melt the butter in the microwave and add it to the liquid yeast along with the lukewarm milk. Stir in the egg and egg yolks, then add the flour. Knead vigorously for about 10-15 minutes, preferably in a food processor. Then let it rise in a warm place for half an hour. Roll out the dough thinly, fill it as desired, and shape it into attractive croissants. Brush with egg white and bake in a preheated oven at 175°C until light brown. Cover the cooled croissants with fondant or lemon glaze.
